Las Casuelas was opened in downtown Palm Springs in 1958 by Florencio (Del) and Maria (Mary) Delgado. Maria Fajardo immigrated from Mazatlán, Mexico, with her five children and husband. Florencio, the son of Maria Fajardo, moved to California with his wife Mary. They wanted to name the restaurant Las Cazuelas, but the sign maker made a mistake and they were not financially equipped to fix it. They are still in business today at 368 N Palm Canyon, Palm Springs, California.
